Oaty Yogurt With Nuts
On those occasions when you're up against a deadline (many home business entrepreneurs feel more pressure being newly self-employed) and you really do have to eat while working at your home office desk, this recipe is a really delicious option!
Packed with oats, nuts and fruit you have all the nutrients you need to maximise your concentration levels and minimise mood-depressing sugar dips allowing you to focus on your home business with less likelihood of unhealthy snacking.
Prep time: 5 minutes
- 25g jumbo oats
- 1 tbsp flaked almonds
- 1 tbsp hazelnuts, roughly chopped
- 2 tsp clear honey
- 3 dried apricots, chopped
- 1 tbsp dried cranberries
- 150g low fat natural yogurt
Total cost: £1.13
Cost per serving: £1.13
Dry fry the oats and nuts for about 3 minutes over a medium heat until toasted.
Stir in the honey and dried fruit and allow to cool slightly.
Reserve 1 tbsp of the mixture and stir the rest into the yogurt.
Spoon into a glass and top with the reserved oat mixture before serving.
Hints and Tips
Try using a flavoured yogurt like strawberry or add fresh fruit for a different taste
