Crab And Apple Toasties
We'll happily admit that this recipe caused conflict amongst the iHubbub team...when is the perfect time to eat a crab and apple toastie?!
Personally I think it's a lunchtime lip-smacker, whilst Paula would rather have it for a snacky supper. Ken however was all for sitting down to breakfast with this toasty treat!
Whenever you decide to have it, make sure you take some quality time out of your freelancing day to enjoy it properly!
Prep Time: 5 mins
Serves 4
4 thick slices of a granary bloomer
2 tbsp brown crab meat
250g white crab meat
1 Kanzi apple
1 red chilli finely diced
The juice of 1 lime
4 tbsp low fat mayonnaise
2 spring onions finely chopped
1 tbsp coriander leaves
Lightly toast the sour dough, then spread with a little brown crab meat.
Finely dice the apple and place in a bowl with the white crab meat, chilli, mayo and spring onions. Mix well and season.
Top the toast with the crab mixture and scatter over the coriander leaves. Serve with a wedge of lime.
