Chutney Toast With Scrambled Eggs
This recipe is ready in under ten minutes, for days when only a hot breakfast will do! If you dive straight onto your PC to juggle all those early morning tasks that all of us home business owners face, give this eggy dish a go for your mid-morning break.
A twist on a classic breakfast providing a good source of choline for healthy brain function and wholegrain to keep you full until lunch while you get on with the task of running your home business.
If you're on a no-bread-groan-diet like me, cause I love bread but it piles on the carbs (!) you could try this with lighter choice breads, soda bread or dare I say it, no bread. If you go the no-route and you're really, really trying to cut calories try it with a slice of low-cal ham under the scrambled egg

Serves 1
- 2 medium eggs, whisked
- Dash of semi skimmed milk (approx 1 tbsp)
- 1 tbsp chopped chives
- 1 thick slice wholemeal bread, toasted
- 1 tbsp tomato chutney
Total cost: £0.92
Cost per serving: £0.92
Place the eggs, milk and seasoning in a small saucepan. Cook, stirring occasionally until lightly scrambled. Stir in the chives.
Spread the chutney on the toast and top with the eggs.
