5 Quick Home Working Cheat Meals

I don't know about you, but when I've been working in my home office all day, the last thing I feel like doing is spending an hour preparing the evening meal.

Over the years I have developed quite a repertoire of healthy home working meals I can have on the table in next to no time, yet still fill growing appetites (and that includes Ken and our bunch of hungry Uni students).

Here are 5 meals that can be made in minutes to keep yourself a healthy home worker.

1.    Cheesy Quesadillas

Serves 4, ready in 15 minutes.

Ingredients:
200g ounces ready-grated cheddar cheese
200g feta cheese.
Small can chopped tomatoes
1 Courgette
Bunch spring onions
Handful of black olives
one pack of wholewheat flour tortillas

Method:

  • Chop courgette and spring onions roughly.
  • Heat a heavy bottomed frying pan, and add a tiny amount of olive oil.
  • Place one tortilla into pan, and allow to heat through.
  • Top one half of tortilla with vegetables and cheese, fold untopped half over on top, and cook for one minute.
  • Flip over and cook for a minute on the other side.
  • Serve with green salad.

We love this quick knock up meal and drooling cheese over the top is total yum. You could try various alternatives too ...

2.    Cheat's Sweet and Sour Chicken with Vegetable Rice

Serves 4, ready when dippas are cooked.

Ingredients:

1-2 packs boil in the bag rice
1 bag frozen chicken dippas in batter
500g frozen mixed veg (Chinese veg mixes work really well)
1 tbsp soy sauce
1 jar sweet and sour sauce

Method:

  • Cook chicken dippas according to instructions.
  • Cook rice according to instructions.
  • Put sauce in microwaveable jug and heat in microwave.
  • When rice is cooked, heat a tbsp of olive oil in frying pan or wok, add rice and vegetables and stir fry until veg is heated through. Sprinkle with soy sauce to taste.
  • Serve with chicken dippas and sauce.

Best of all ... any or all of the left-overs (if you have any) for this meal and most of the ones below - can be thrown into a quick quiche and eaten hot the next day or cold when you take that well deserved break from your home business.

3.    Minestrone Soup

Serves 4 Ready in 15 minutes

Ingredients:
Large jar passata
Chicken stock cube
250g quick cook pasta
I small bag mixed frozen veg
75g cheddar cheese
1 tsp Italian herbs

Method:

  • Dissolve the stock cube in 1 pint boiling water in a large pan and use to cook pasta.
  • Drain pasta, and return to pan, retaining a little stock. Stir in passata, frozen veg, and herbs.
  • Serve with crusty bread, topped with grated cheese.

In hot weather, take a garden break in the day and you could try a cold soup.

4.    Quick Tomato Fish

Serves 4, ready in 15 minutes

Ingredients:

1 tbsp olive oil
1 onion, finely  chopped
400g can chopped tomatoes
1 heaped tsp brown sugar
dried thyme
1 tbsp soy sauce
4 White fish fillets

Method:

  • Heat the oil in a frying pan and fry the onion for 2 to 3 minutes, until softened.
  • Add the chopped tomatoes and sugar and heat gently for 2 minutes, stirring.
  • Stir in thyme and soy sauce, and slip fish fillets under the surface.
  • Cook for 15 minutes, until fish is firm. Serve with oven chips for a healthy low fat meal.

Be creative with your quick cheat meals - replace fish with chicken to vary your healthy meals and snack times.

5.    Creamy Carbonara

Serves 4, ready in 15 minutes

Ingredients:
250g pasta
1 onion, finely chopped
2 garlic cloves, finely chopped
6 slices of streaky bacon, chopped
2 eggs
1 small carton single cream
25g parmesan cheese, finely grated

Method:

  • Boil a large pan of water and cook the pasta.
  • Meanwhile, heat 1 tbsp oil in a small frying pan and cook the onion, garlic and bacon for 5–7 minutes until lightly brown.
  • Beat together eggs, cream, and most of the Parmesan.
  • Drain the pasta and quickly return to the hot pan, off the heat.
  • Add the onion and egg mixtures and toss together until the pasta is evenly coated.
  • Divide between two bowls then scatter the rest of the Parmesan over, with a grinding of black pepper to serve.

My favourite quick meal of all! And use loads of fresh herbs! You can even grow them on your windowsill amongst your other home office plants.
